As a mom of 4, it’s often difficult to find a recipe that EVERYONE in the family devours, but friends, this one is a winner. You know it’s kid-friendly when all 4 kids ask for a second helping!

This recipe is an adaption from my mom’s lasagna recipe that I grew up with in the Midwest. I used to make her homemade lasagna recipe all the time before I was diagnosed with Celiac Disease.

I loved it because unlike a lot of other recipes, it’s super simple and truly delicious.

My mom’s recipe always called for boiling the regular lasagna noodles. However, after multiple disasterous attempts with overcooking or undercooking gluten free noodles, I am now fully on the bandwagon of using oven-ready noodles.

The main thing to keep in mind with these noodles that don’t require boiling is that they must be covered in sauce (from all sides). If you get this right – your gluten-free lasagna will be amazing!

Ingredients for Gluten Free Lasagna Recipe

You will need the following ingredients for this homemade gluten-free lasagna:

  • Gluten-Free Lasagna Noodles – we like the Barilla Gluten Free Oven Ready Lasagne Noodles – note that you’ll only need half the box.
  • Marinara Sauce – You will need more than 1 jar – but less than 2. Admittedly most of the time, we usually use our homemade pasta sauce (made from tomatoes from our garden). However, the recipe is still pretty awesome using store bought Prego pasta sauce. We used the roasted garlic and herb Prego pasta sauce for this tutorial!
  • 1 pound of ground beef
  • 2 1/2 cups of mozzarella cheese
  • 24 oz Container of Small Curd Cottage Cheese (make sure it is gluten free and I don’t recommend low-fat)
  • 1 egg

Let’s get started on our best gluten-free lasagna recipe!

How to make Easy Gluten Free Lasagna

First, in a large skillet, brown the ground beef. Cook on medium-high heat until cooked through and no pink is found.

Next, we will prepare the cheese filling.

In a medium size bowl, add the cottage cheese, shredded mozzarella cheese, and egg.

Stir together until thoroughly mixed.

Now it’s time to assemble the lasagna!

The first layer needs to be sauce (to cook those gluten free no boil noodles).

In a 9×13 glass baking dish, pour a layer of sauce to cover the bottom of the dish. Then add your gluten free noodles.

I usually use 4 no boil noodles per layer. If my oven-ready lasagna noodles overlap each other at all, I make sure to add a bit of sauce between them. Once your noodles are in place, it’s time to add sauce again.

Remember, we need to cover the no boil gluten free noodles from every angle with sauce so that they will cook properly.

Once you’ve added sauce, go ahead and add half of your ground beef. Then add a cheese layer. I usually use almost half of the cheese, saving a bit more for the top layer.

Then do it all over again!

Add a sauce layer, 4 more no boil noodles, another sauce layer, a ground beef layer, and last – a cheese layer.

So if you want a breakdown of that my layers look like this:

1) sauce

2) no boil noodles

3) sauce

4) half of the ground beef

5) almost half of the cheese mixture

6) sauce

7) no boil gluten free noodles

8) sauce

9) remaining ground beef

10) remaining cheese mixture

So yes, you are going to need a lot of sauce. I didn’t quite use a full 2 jars of sauce, but you’ll definitely need more than just one jar.

You might be tempted to just use 2 full jars, but I don’t really recommend that. I have tried that in the past and it turns out a little saucy – hmmmm…..figures!

Once you have assembled the lasagna it’s time to pop it in the oven. It will need about an hour to cook.

We cooked ours at 375 degrees for 1 hour. Test the noodles to be sure they are cooked through.

If you find that your lasagna is browning too much on the top you can add a piece of aluminum foil to protect it from further browning.

What do you do with the remaining sauce?

We use the extra sauce either for pasta night spaghetti, for making our own little gluten free pizzas, or as a dipping sauce for our gluten free Garlic Bread.

How long can I store lasagna?

If you happen to have leftover lasagna you can store it in an airtight container in the refrigerator for up to 3 days.

What should I serve with gluten free lasagna?

Our family likes to serve gluten free Garlic Bread with our lasagna. It’s an easy recipe that doesn’t take much time to prepare.

We also like to pair it with a fresh salad, steamed broccoli or steamed peas.
