(Just a reminder that fresh jalapenos can leave residue on your hands and give you a burning sensation or worse, get in your eyes.  So be sure to take precautions!)

What Substitutions can be Used?

If you don’t have cottage cheese, you can substitute in mayonnaise. We make it both ways all the time!

You can experiment with different types of cheeses.  You could try Monterey Jack, Pepper Jack, or your favorite shredded cheese next time.

The butter at the end is optional. If you want to cut a few calories, you can omit it. I’ve forgotten to add the butter and the dip was just fine without it!

If you have visitors that don’t like spicy food, you can omit the spicy peppers on half of the dish.  Or if your taste buds are hoping for something spicier than medium heat, you can add extra spicy peppers.

Other things you can dip with besides tortilla chips include: gluten free pretzel bites, your favorite cracker, gluten free Trader Joe’s baguette slices, bell pepper slices, carrot sticks, or other raw vegetables.

How do I make enough for a crowd?

You can definitely double or triple this recipe. It normally serves 6 people.

Just be sure to use an appropriately sized baking dish and adjust the baking time as it will take longer to heat a larger amount.
