Ingredients Needed for Air Fried Zucchini
For this easy Air Fried Zucchini recipe you will need the following simple ingredients:

- 1-2 Medium Zucchini
- Olive Oil – we like to use Bertolli Olive Oil (Extra Light Taste)
- McCormick Onion Powder
- Garlic Powder
- Sea Salt Grinder
- Shredded Parmesan Cheese (not grated) – we like to use the Great Value brand
Let’s get started on our easy recipe for Roasted Zucchini in the Air Fryer!
How to make Roasted Zucchini in Air Fryer – No Breading
First, wash your medium-sized zucchini and pat dry with a paper towel if needed.
Cut the zucchini into uniform strips.
I like to slice the zucchini into short thick fries by cutting the zucchini into thick wedges, and then slicing those in half.
Place the zucchini slices in a single layer into the air fryer basket.
Make sure that the tray is not crowded to insure proper roasting. (If your tray is crowded it may result in soggy zucchini).
If you’ve sliced up too much zucchini simply place your leftover zucchini in an airtight container in the refrigerator to use the next time or you can plan on air frying a second batch.
Spritz the diced zucchini generously with olive oil. I love this oil sprayer. I use it constantly in my kitchen.
Next sprinkle the zucchini evenly with onion powder, garlic powder, and salt. I have given you measurements to guide you, but when I make it, I usually shake spices right on, eyeballing it.
Air Fry at 375 degrees on your Roast setting for about 10 minutes or until golden brown.
Midway through your cook time, pause the air fryer and shake the basket to move the zucchini around a bit for uniform cooking.
Then continue to cook the remainder of the time.
When the zucchini is cooked through and tender, it’s ready!
Remove from the air fryer, and sprinkle the hot zucchini with shredded parmesan cheese.
Now, make a second batch if you like.
Note that the spices noted on the recipe card are for each full tray batch, so you might need a little less spice for a half batch.
I like to serve this easy zucchini side dish with rotisserie chicken, grilled pork, or steak.
It’s the perfect side dish when you have a ton of zucchini to use up.

What do you do with extra cut zucchini?
If you need to avoid crowding your air fryer and you have additional sliced zucchini, you can keep it in an airtight container in the refrigerator for up to 6 days and add it to your next batch of air fried zucchini.
Can I use Large Zucchini?
Large zucchini tends to be more seedy, hold more moisture, and be mushy. I don’t recommend using your large zucchini for this recipe.
You could experiment with using the outer portions of a large zucchini to make these air fryer zucchini fries. But in general, I would use your medium or small zucchini for this recipe.
How long can I store Air Fried Zucchini?
If you happen to have leftover air fried zucchini parmesan, you can store leftovers in an airtight container in the refrigerator for up to 3 days. It always tastes best fresh though!
What spice can I substitute for Onion Powder?
If you want to switch things up, you might like to try: black pepper, Italian seasoning, red pepper flakes, fresh herbs, lemon juice, or your favorite spice mix.
You can test different seasonings to see which one is your favorite for this tasty side dish.
