First, wash your medium-sized zucchini and pat dry with a paper towel if needed.
Cut the zucchini into uniform strips. I recommend short, thick fries.
Place the zucchini slices in a single layer into the air fryer basket.
Make sure that the tray is not crowded to insure proper roasting. (If your tray is crowded it may result in soggy zucchini).
If you've sliced up too much zucchini simply place your leftover zucchini in an airtight container in the refrigerator to use the next time or you can plan on air frying a second batch.
Spritz the diced zucchini generously with olive oil. I love this oil sprayer. I use it constantly in my kitchen.
Next sprinkle the zucchini evenly with onion powder, garlic powder, and salt.
Air Fry at 375 degrees on your Roast setting for about 10 minutes or until golden brown.
Midway through your cook time, pause the air fryer and shake the basket to move the zucchini around a bit for uniform cooking.
Then continue to cook the remainder of the time.
When the zucchini is cooked through and tender, it's ready!
Remove from the air fryer, and sprinkle the hot zucchini with shredded parmesan cheese.
Now, make a second batch if you like.
