Pot roast is a classic meal here in the Midwest. Growing up on a farm, there was nothing better than a delicious meat and potatoes meal.

It’s truly comfort food that always reminds me of my childhood.

This pot roast has some delicious twists that add in so much flavor and I’ll share my best tips for getting those carrots and potatoes cooked to perfect. No mushy veggies here!

Plus, this pot roast recipe is gluten free and kid-friendly. I have 4 kids who get very excited about pot roast night!

Ingredients for for Slow Cooker Pot Roast Recipe

– 3 lb Boneless Beef Chuck Roast (If its a little bigger or a little smaller, that’s fine, just adjust your cook time!

– 3 beef bullion cubes in a cup of water (I use Gluten free Herb-Ox) but you could also use beef stock or broth

– 1 small onion chopped (about a 1/2 cup)

– 3 tsp. minced garlic (which is 3 cloves of fresh garlic)

– 2 tsp. Montreal Steak Seasoning

-1 Tbsp. Worcestershire sauce (Lea & Perrins is gluten free)

– 4-5 Large Carrots, peeled and chopped into large pieces (For a faster option for busy weeknights, you can use baby carrots)

– Baby Potatoes – cut in half (about 4-6 potatoes per person) You can also use regular potatoes if you prefer.

How to make this Easy Pot Roast Recipe

First, place your roast in the slow cooker.

Prepare the beef broth by placing 3 beef bullion cubes in a glass measuring cup with about 1 cup of water. Microwave for 1-2 minutes until your bullion cubes can easily be mixed into the water. Add the broth to the crockpot.

Next chop a small onion. You need about a 1/2 cup of chopped onion. Add this to your crockpot as well. I like to make sure the veggies are under the broth to ensure proper cooking.

Now, sprinkle the top of the roast with 1 Tablespoon of Worcestershire sauce, 2 teaspoons of Montreal Steak Seasoning, and 3 teaspoons of minced garlic. If you are using fresh garlic, that’s equal to 3 cloves.

Set the slow cooker on Low and cook for 9 hours. Halfway through the cook time, add your vegetables!

Be sure that you cut them into larger pieces so that they don’t get mushy.

You can make as many vegetables as you like, but keep in mind that they will cook better if the slow cooker isn’t overcrowded.

For my family of 6, I use 4-5 large carrots and about 4-6 little baby potatoes per person.

Sometimes, I add more so we can have leftovers, but the key is to not overfill the pot.

Pour extra water into the crockpot – just enough to keep your vegetables mostly under water.

Cover the crockpot and continue to cook until you’ve reached the end of your initial 9 hours cook time or until the meat is tender.

I usually start my slow cooker at 8am, add potatoes and carrots around noon, and then our meal is ready around 5pm.

If you aren’t able to add the vegetables at the midway point, you can add them at the beginning of the cook time. Just be sure to slice the vegetables extra large so they take longer to cook.

I like to add them midway to ensure that they cook through and get soft, but retain their shape and don’t get mushy.

And…. that’s it! It’s absolutely an entire meal in the pot!

However, if you want to make the meal stretch further to last for multiple meals, we often like to serve garlic and herb biscuits, fruit, or a salad alongside this easy pot roast.

Chuck Roast vs. Bottom Round Roast

If you are looking for the most tender cut of beef for pot roast, you’ll want a boneless chuck roast. It has the perfect amount of marbling, which helps the beef roast turn out tender and juicy.

You can use other cuts of meat, but a chuck roast will give you the best results.

If you use a different cut of meat like a bottom round roast, you will need to adjust the cooking time as it will need a little longer to cook. And the results may not be as tender.
