Easy Cheesy Potato Casserole Recipe (Gluten Free!)

- 30 oz Shredded Hash Browns, Thawed - Mr. Dell's and Ore-Ida are gluten free
- 1/2 Cup of Butter
- 1 tsp. Salt
- 1 tsp. Pepper
- 1/2 cup of Diced Onions
- 10.5 oz can Gluten Free Cream of Chicken Soup Great Value, Campbell's, and Good Graces brands are gluten free
- 1 Cup Sour Cream
- 1 1/4 cup Milk
- 2 cups Shredded Sharp Cheddar Cheese
In a large skillet, melt the butter. Add the 1/2 cup of diced onions, 1 teaspoon salt, 1 teaspoon pepper, and sauté until the onions are translucent and cooked through.
Remove skillet from heat. Mix the butter and onion mixture with the 1 1/4 cup of milk, 10.5 oz can of gluten free cream of chicken soup, 1 cup of sour cream, and the 2 cups of cheddar cheese.
Then in a large bowl, add the shredded hashbrowns and pour the soup/cheese mixture over the top and mix well.
Put the hashbrown mixture into a greased 9x13 baking dish
Bake at 350 degrees for 45 minutes.
